Following high-profile announce-ments
from each of these partnerships
in anticipation of the legalization
of edibles in December 2019, many of the
CBD-infused beverage products are just
being released now.
“The infusing CBD into beverages
is a finnicky and complex process,” said
Han. “It’s very difficult to maintain
consistent potency, compatibility, flavour
and appearance without intricate
emulsion expertise.”
CBD oil remains aggregated in water
without an emulsifier to help it suspend
evenly. According to Han, choosing the
wrong emulsifier can negatively impact
the beverage. In just one example, some
emulsifiers are not compatible with
polyphenols, so when cannabis is infused
into pomegranate juice (containing high
polyphenols), the chemical reaction may
cause solids to form.
However, Han’s company takes the
guesswork out of infusion and handles
the emulsion science so beverage makers
don’t have to. Of course, they’re not the
